Where Does the Pistachio Come From?
The pistachio originally comes from the Middle East and Central Asia, particularly from areas of present-day Iran, Afghanistan, Syria, and Turkey. Thus, pistachios have been around for thousands of years! Archaeological findings show that the drupe was consumed as far back as 7,000 to 9,000 years ago. In the Persian Empire, it was considered a delicacy and was mainly consumed by the wealthy. Through trade routes, it reached Italy, and the Roman Emperor Vitellius was reportedly a big fan. Today, the main growing areas are Iran, the U.S. (especially California), Turkey, and Syria.

Pistachios are currently hitting the zeitgeist. The soft green perfectly matches the current aesthetic trend: minimalist, cozy, and natural. It’s no wonder the color is popular in fashion, interior, and design because it appears modern, fresh, and elegant, yet also calming.
But pistachios have also stormed other areas and are setting trends in the food sector on TikTok and similar platforms. Tiramisu, croissant, cheesecake—there’s hardly a dessert that hasn’t been given a fresh twist with pistachio. Like matcha or truffle, it sounds sophisticated, looks good, and is easy to showcase.
How Do Pistachios Taste and Smell?
Botanically speaking, the pistachio is not a true nut—but culinarily, we often treat it as one. Pistachios are drupes, just like peaches, mangoes, or cherries. The part we perceive as the “nut” is actually the seed inside the drupe.
Pistachios taste nutty, but milder and softer than, for example, almonds or hazelnuts. They have a subtle sweetness and taste slightly buttery. Some people also detect a hint of vanilla or cream in the finish. When roasted, pistachios become heartier and develop a slightly smoky aroma. In sweet pastries or ice cream, pistachios develop a marzipan-like quality.
The smell depends on the state of the pistachio. Raw, it smells delicately grassy-green, slightly earthy. Roasted, it smells nutty-warm, slightly sweet, a bit like the scent of freshly baked cookies with a nut aroma. In pistachio cream, the scent is reminiscent of nougat.
